Vegan, Organic Easy Recipes from Geri's Grub

Veganism is enjoying a huge rise in popularity over the last few years, and for good reason. It’s a great way to cut back on your carbon footprint, improve your health and save money. However, you don’t have to go vegan to get the benefits of eating healthy. 

As promised I am posting the recipes for our first 'whatever the mind can see the body can achieve® workshop.  Our first recipe is the easy to make go to salad.

Spinach Feta Salad

key ingredients:

6 cups of Chopped Spinach

1 medium Red Onion

1.5 cups of Riced Cauliflower

1 8 oz of Vegan Feta Cheese by ViloLife®

1/2 cup of fermented champagne with temp and 4 organic dehydrated apricots

3 tablespoons of Olive Oil

4-6 Organic Dehydrated Apricots

2 tsp of Stevia

1 tsp of Pink Salt - dressing

1 tsp of Black Pepper- dressing

Once salad is mixed add salt and pepper to taste.

Directions:  EASY!!

First 3-7 days before making you salad.  Open you champagne or grab an open bottle from New Years Eve and put in 5 -7 springs of fresh thyme.  ADD 4-6 organic dehydrated apricots.  Put the cork bak in and let sit to ferment for a few days in the refrigerator.

1. Shop you spinach up into easy to chew pieces.  Nothing worse than trying to eat spinach without looking like you are eating grass.

2. Chop your onion into very small pieces. the small the better

3. Crumble up your feta cheese into tiny piece.

When ready to make the sale mix all dry ingredients together.

Next in a blender take Champagne, Oil, Stevia, Salt and Pepper and blend to desired sweetness.  Feel free to add more stevia,  monk fruit or allulose to sweetens the dressing to taste.

Pour over all your dry ingredients and mix till dressing coats all the spinach and it looks and feels wet.
